There’s been too much stuff going on. I haven’t done a whole lot of baking (or food preperation of any sort) lately because I’m still looking for that moment to relax, breathe and space out for a minute. In the meantime, I have been relying on New York’s conveniences to get me through the week: take-out, delivery, convenience stores and most importantly, coffee. I guess you can say that I haven’t really sat down and had a meal. When I have one of these weeks, I always make a simple chicken bake like this at least once during a typical chaotic period in my life:

There is something comforting and calming about food that is homemade, no matter how easy or complicated it is. The chicken bake recipe (as seen in the photo above) gives you the flexibility of making it as fancy as you want if you decide to make your own stuffing, cream of mushroom soup mix or raise your own organic chickens. You know, fancy stuff!

If you’re usually short on time like I have been lately, purchase some fresh meat and/or vegetables and keep the staples for this recipe around the house so you will always be ready to make this easy homemade dinner. And plus, you just throw a bunch of shit together in the oven to make this dish. It’s that simple really.
